My local homebrew shop sells what I believe are called grommets to allow access through the lid for airlocks and I assume they would do fine with a thermometer or heater cable too, especially if combined with a little vaseline (he says knowing the children won't be able to help themselves).

Sorry for your pain. If you can't get star san, there's new gear called chemsan which is effectively the same. Edit to say, I too would replace all your plastic fermenting stuff if that is practical. As myles points out, this is far more techy, than most of us even seek to understand.
