Lemon juice and/or citric acid

In the light of making my recent (first) wash I discovered something that might be helpfull some day.

Say you are brewing and you find yourself without some citric acid or any usable acid to get the ph right for fermentation...
But say... you accidently have some lemons laying around, well the question will be... "but... how much do I need?"

Some research led to the conclusion that an average lemon has rougly 1/3 of its weight in juice; meaning a 150gr lemon contains rougly 50gr of juice.
Still this is no answer to the question how much grams of juice you need to have the equivalent of a specific amount of acid.

This leads us to the next step, so lets say 1 gram of juice (freshly pressed) contains 0,07 grams of citric acid
This means if you need 15 grams of acid you need 15 / 0,07 = 214 grams of juice and 214 x 3 = 642 grams of lemons.
Say your lemons average at 160 grams then 642 / 160, so life just gave you 4 lemons to squeeze :D

et voila!

My head is in no state to question your maths, but I respect that you have done your research.
Personally, I never look at ph until the ferment is working, I am a lazy S.O.B.
But I applaud your efforts.

You certainly dont need very much. When I do a TPW and lentil ,
I put 2 tsp in 25ltrsThats C A or squeeze half a lemon.
How much you need comes back to your water and its Ph .
My water here just outside London is hard as nails .

Oh my word this is a big subject.
I'm going to make some random statements and see what happens.

Water hardness, both temporary and permanent will affect the pH, but do not control it.
Adjusting the hardness will not necessarily control the pH but may well help the fermentability.
You don't need citric acid, every time for every wash. I very rarely put it in.
If it is just for buffering you can use tartaric acid and this has less flavour.
Acids are what used In the first stages of fermentation to invert the sugar from sucrose into glucose and fructose.
You Invert it separately by boiling your sugar with lemon juice. This also increases your fermentability.

That said, you are right Gazza - furry kettles do make good beer. Hard as nails here to! Big railroad sleeper nails :D

I do have a calculation around that I have used previously for 1st run rum, based on bottled lemon juice.

I used total sugar (added sugar plus the content from treacle) in grams x 0.001 to give grams of citric acid.

e.g. 25 kg sugar plus 2.5 kg treacle is equivalent to 26.6 kg sugar in total. (Treacle is about 64% fermentable sugar)
26.6 x 1000 x 0.001 = 26.6

Amazing isn't it total weight of sugar in kg = grams of citric acid
Bottled lemon juice in ml = 10 x grams of citric acid. So in this case it is 223 ml.

I also add a trace of epsom salts 0.5 teaspoon to 100 litres.

After the first run though I use fresh backset so do not use the lemon juice.

So which is most effective??
I know which is more expensive!!
Lemons are not cheap, especially as her in doors has gone all organic!!
Citric Acid is thrumpence a kg.

And I have seen food grade even cheaper Myles.
Orgasmic Lemons or whatever she buys are about 50p
a go.

You can bassicaly get a kilogram for 4-5€ at the homebrewshop here on the EU mainland. Bigger bags are possible and even cheaper.

34 years ago !! With good behaviour I would have been free
in 10 years.
