Not Enough Water

I just realized that a sugar wash I started about a week ago was never topped off to the full 25 liter mark and is sitting just a tad bit above 21 liters.

It hasn't given off any odors, and has been bubbling along through the air lock just fine. I think I'll just let it finish and run it. See how it turns out.

For future, I've used a black felt tip to darken in the 25 liter mark on my fermentor.

I won't hurt either way - but you might find it will take longer to finish.

How much sugar did you use? If it was 5kg I would top up.

I put in 6kg of white sugar and my last packet of Turbo Pure. So, perhaps I should top off?

I'm going to be switching to a different yeast after this. Probably EC1118 in a kale wash.

It will stress the yeast a bit and you may notice a slight flavour difference.

For your info I USUALLY do a two stage fermentation. I start off with about 1/2 the final fermenter volume and part of the sugar. For about 3 days it goes like crazy, once it has settled down I add any remaining sugar and top up to final volume.

With fruit this is my standard method. I ferment a thick fruit pulp for 3 to 5 days, then add any additional sugar and top up to final volume.

It is also my standard method with rum washes. I have a target of 11% ABV for these, and that much sugar all in one go is just asking for trouble. I like to split it into two batches. I start with sugar and a bit of treacle, then add the rest of the sugar a few days later.

I'd chuck the extra water in . It'll adjust the ph which will save you doing it.
