Limoncello thoughts

What are your thoughts on limoncello?
Specific recipes? Specific lemons? Maybe a lime variation?
Please let me know as I tend to be a curious person.

I love Limoncello.

This is my recipe, ripped from the internet that suits my taste perfectly.

Ingredients

1 litre 40% ABV Alcohol.

10 large lemons

1 litre water

1kg Cane sugar

Process

Peel 10 lemons, leaving as much pith out as possible

Place peel in a jar filled with 1 litre of vodka with something to cover the opening.

Steep for 5 days

On 5th day make sugar syrup, by boiling 1 litre of water, slowly adding sugar and stirring until dissolved. Leave to boil for a further few minutes, then let cool naturally.

When cool, add mixture to Jar, and leave to steep overnight.

Then sieve the rind from the mixture and decant into bottles.

Best server chilled. Keep in the fridge at all times. Lasts a month (probably much longer), but always goes well before that!

Makes about 2 1/2 litres.

And You Sir are a faker!
You act the idiot, but have more going on in that head of yours than you care to admit.
Your delinquency does indeed raise the odd smile, but you have also proved yourself more than capable of being a a useful member of society.
I personally like you more when you wear a serious head, but do keep me smilin'! :)

If you have access to high % neutral you can save yourself the heartache of peeling the lemons. just suspend them above the neutral in a jar.
Cut with sugar water to the desired % and sweetness.

Good stuff guys, interesting, it is always good to know that fellow stillers have good results with a given recipe, I always prefer this above "just a recipe I found on the web".

Quite interesting, how high does the ABV need to be? And how long will you have to steep it this way. Any thoughts on how well you get the flavors out of the peel with this method compared to the traditional steeping? Also I do think the alcohol doesn't get in contact with the bittery white stuff of the peel; could be a reason to do this?
