I would hope that Anavrin's experience in the intervening period has convinced him to my way of thinking!
A fermenting vessel needs an easy clean option. I believe a stilling vessel needs the same.
I struggled with cleaning a barrel 30 years ago.
It stopped me distilling for a while.
Until you have a need to do a proper barrel clean, you will not appreciate what I am trying to say.
These days I ferment and distill in "whole lid off" vessels.
I am a happy bunny as a result.
