I imagine a lot of people will use 2 teaspoons of mixed spice rather than the one I suggest, but the asda mix is quite high in cinnamon so quite Christmassy already, so I'd start with 1 teaspoon. The Schwartz mix is very high on coriander and has some caraway, so may be of interest to those with more of a palate for gin than me.

It does age and flavour things quickly.
Try 80g JD smoking chips
800ml neutral
All in a seal able glass jar and neuk once a
day for 3 days on last visit add some honey,
or sugar or maple syrup.Then use a coffee
filter and strain.

Using Anavrin's lazy rum as a starting point viewtopic.php?f=16&t=4032

1) Make rum. 3 or 4 jars of meridian molasses from Holland and Barrett, 4 or 3 kilos of sugar, bread yeast, water to 23 litres/5 uk gallons. Maybe less molasses and a gallon of dunder on subsequent runs.

2) To 1 bottle (70 or 75cl) add roughly 1 teaspoon of Asda ground mixed spice (branded stuff such as Schwartz has more coriander which may or may not suit you), a few drops of vanilla essence or a slice of vanilla, a few drops of glycerine (or a little sugar or honey) and a little orange peel (optional but suggested if you like Captain Morgans).

3) Ding in microwave and seal a couple of times to cool as per viewtopic.php?f=6&t=2034

4) Filter out the sludge with coffee filter or similar.

5) Enjoy.
