It reminds me of the first time I did a home brew beer. Even from a kit it's an amazing feeling when you take that first sip and go....bloody hell...it tastes like beer.

Ran through a basic still dragon pot still sat atop my grainfather.

Spent over a month just reading this forum and a few others before I got started.

Was fascinated by the idea of a dunder pit so I was sort of expecting this one to more or less be a sacrificial run so I could get that started, didn't expect it to turn out as good as it did.

When I started I stuck to the straight sugar wash.. :D my favourite wash at the moment is using GS to make a white rum...and it's very moreish.

Just tried this as my first wash/run ever. Obviously new to the whole process and made very amateur cuts. As followed his method with the following ingredients.

I started the ferment off with 3l tate & lyle black treacle, 1 litre of bakers yeast boiled in water (as first time I had no lees or dunder), and a small bottle of lime juice.

After 3 days I added a syrup made with an additional kilo of cane white sugar.


Fermentation was complete in a week and a ran 20 litres in a stripping run which yielded 4.5l at 50%.

Spirit run with pot still gave 1l of foreshot/heads (just went by the recipe rather than taste) and 2 litres of hearts at 55%. I erred on the side of caution with my tails cut and could have probably got more .



I aired for 24 hours then diluted hearts to 40%. Used the backset to start my dunder pit. It left me with 3.3.5 bottles of 40% white rum. Will try the gold and black next time now I have some actual dinner. Had a glass tonight with Pepsi and it is absolutely delicious. Would like to try aging on oak etc but haven't got anything in at the moment. If it can only get better than this then I am very impressed


I highly recommend this recipe


I think next time I will add 2kg of sugar rather than 1kg as buccaneer bob got a bit more of a yield than I did.
