Had some sage advice from Aidan and Opus; know there's plenty out there on aging.
Had to give it a go, but no oak at hand. On that topic some of the oak (chips, whatever?) I see being offered up really better qualifies as dust. That's all.
Have some manuka branches about 25mm dia set aside for my smoker, drying. Try that.
Cleaned off all bark and daggy bits, sliced off 4 pieces about 5 - 8mm thick.
Quick toast on the gas ring followed by an equally quick brushing to remove the loosest of the charring, microwave on high 1 minute, then into the jar of hearts 1.7litres @40%
One week later what a difference. Plus it's only early days so more to come.
