If I did mine again I would solder in a small piece of small diameter rod drilled with a bit along its length but not right the way through to make a kind of closed end Port then assemble the arm etc but I already assembled the whole piece so I simply drilled a hole the same diameter as the probe and inserted it ......tight fit.....then I pop a blob of play doh so stop any possible leakage around the probe.
Works for me.

I take the point that it’s not absolutely needed but I find it very useful in stabilising the temp when using the controller so that I can seperate the cuts jars so for example everything up to 80degrees I count as fores

My still is different to a T500, but I soldered in a short length of open ended tube to the top of the column, pushed a thermometer probe in and sealed it with HA6.
I find it useful. :)

If you really what to go 100% use a bolt together thermowell...and poke a bit of copper scrubby in the end if you are using a glass thermometer.

I see your point about stabilising the temp when using the controller - but might be better served with a energy meter. That said, for the little extra work, it can't hurt.
Probably help you get to the sweet spot, and once your have run it a few times you will use it less.

Personally on a pot still I do put a thermometer at the high point of the vapour path. However, and it is a BIG however, I only ever use it for one thing.

On a strip run it tells me when to turn off the power. There are other ways to do the same thing, I just find it convenient to use the vapour temperature to indicate the end of the run.
