1. Temp when yeast was pitched
2. Original gravity - before yeast pitching
3. Fermenting temp - this changes. Rising as the ferment proceeds, and dropping as the fermentation approaches completion.
It is important to determine if the yeast has expired because of excessive heat, or has simply gone into hybernation because the brew is too cool (see 1.).
The former involves pitching more yeast etc.,
The latter is simple to fix with a cuddly rug or heat pad.
Don't be in a rush to cool or warm the wash unless you know the temp range the yeast prefers to work in.
