This week I will be doing some Birch tree tapping to see if I can change the flavor on a sugar wash,,

All in all it has been a fun run,, lol i need mor warm weather to get some more washes on the go!!

Oh St Lucia in the Caribbean has some great rum,,

Then I tried double distilling and stuck to that.

In some ways I preferred the single run product. Obviously less pure but the heads added a certain something. Sort of a whiskeyish vodka. Downside was that there was a price to pay the next morning after hammering it. Nowhere near as bad as hammering whiskey but there all the same.

I just want to ask a question out of curiosity.
On my last batch I didn't take enough of a heads cut and this was evident when tasting the spirit,
Wasn't too bad but there was a heat there.
Now my question is.
Has anyone actually drank spirit from the airstill done the wineworks way?
If so what was it like? I can only imagine it must be like lava seeing as all the heads would be in there.
I didn't get the chance to try it like that as I found this site in time.
