As for the water, in my wash\'s I only ever use tap water.

For cutting my spirit I use this http://www.noblebeverages.com/ at $6 for 10 liters its a safe bet.

Scottish brewers reckon the reason their Whisky is so distinctive is the Mountain spring water they use.

This is what is in the stuff I use -
per Litre
Calcium 10.0 mG

Magnesium 2.5 mG

Sodium 9.0 mG

Potassium 2.0 mG

Bicarbonate 25.0 mG

Chloride 12.0 mG

Sulphate 10.0 mG

Nitrate 11.0 mG

pH 6.2
There also seems to be quite a lot of water in the bottle!

some swear by reverse osmosis, rain water, bottled IMO its what ever tastes best for you. I have one of those cheap carbon filters fixed to the tap and it does a good enough job for me. I have tried it with and without and cant really notice the difference.
If your worried about limescale build up in your still every I dunno, erm 2-3 washes run diluted white vinegar and water for about 30mins once it starts dripping.

Turn it off then rinse container when cold, keeps it sparkly.

Over here still water is about £3.09 for 9 Litres. My favourite is \'Highland Spring\'

but you can get \'Aqua Pura for even less -- about £1.99 for 9 Litres. Not sure I\'d be happy with the electric bill trying to distill that amount!

I always use it for dilution, but whether it is worth using for fermenting also, I dunno. I just know that our tap water leaves a green stain on anything it comes into contact with for a long time. I guess you just need to experiment!
Welcome Mark1.

Personally, I drink the tap water all the time and it\'s OK for general purposes, and I used it with my first dilutions and they taste pretty good to me (ss ouzo and ozi rum).
Is it worth doing a slow 6 hour water distillation out of the Ezistill or purchase it at Aus$3.50/four litres?
Sheers.
