Sure, we can all do what we want, that's the beauty of making our own booze, but everything I've read says that technically to call it a London Dry that's the process it has to go through.

and 1ltr water.
Shut off @ 58%, gave me 816mls @71%.
Added 600ml Bottled best water.
Total just over 2 bottles of 42%
high quality Gin.
42% reduces the chance of the gin going
cloudy.(louching)
So not a bad score really, 2ltrs in,
1.4ltrs good Gin out ;D

In much the same way as when I do my whisky, I have 4 x 23 litres of wash on the go. These, after stripping and spirit runs will hopefully produce sufficient for a number of gin runs. Whilst the 300ml on a single run seems small, that figure climbs significantly as a loss of high proof product across a number of runs.

Given the high quality neutral that many here produce, I had thought (hoped) that a lower cut off point might possibly have been used.

This is meant in no way as a criticism, indeed it was your posting which finally motivated me to attempt a Gin. I was just surprised at the cut off point, so raised the question.

approx. Its normally 55% B4 its switched
off. Alcohol behaves the same whether strip,
spirit or finished , the strength dwindles
so does the quality.Besides on 3ltrs we're
only talking 300mls or so.

As only doing 3 ltrs the difference between 60
and 39% will only be 300mls or so :)

My trouble is that once I decide to try something, I find that setting about it gives rise to lots of questions I feel I need clarification on.

Given that one have a very good neutral to start with, as many here do, why the cut off at 60%? Do the botanicals themselves come over too much by going lower?

I think I will be adding Kaffir Lime Leaves, and also a pinch of Orris. I might not live long enough to produce my own, but I do have some commercially produced. I just feel that such a mixture of botanicals requires stabilising (fixing) where possible. Of course there is the added bouquet.

I suppose we all have, in our minds, that perfect Gin. Whilst I too often add a slice or two of lemon or lime to a G&T, I do like the Gin itself to carry the astringency of citrus overtones.

My disadvantages of course, besides inexperience in the process, is that given my equipment, my neutral will never be really neutral. I might well triple distil before moving on to the botanicals.
