I did read a while back were a guy use a wheat beer yeast in a rum wash, that he said turned out well, maybe worth a try??
But if it was his first time bakers yeast would have turned out ok too.
So down to business
Yeast is huge subject AND makes a huge difference - more than people care to realise in WINE.
I cannot speak for spirits 'cept that I have found a good neutral yeast with Fermipan from lallemand.
You've inadvertently answered your own question I think. You select your yeast to your wine based on your fruit. Be careful then..... Rum yeast will assume (I reckon) that you are using cane-based fermentables. Something that works well on that won't necessarily work on say white table sugar and a jar of molasses.
I am a massive fan of lallemand - I import quite a few of their yeasts. Both for wine & Beer.
I would bet my next bacon butty on the fact that they do a rum yeast - and support it with an enormous amount of information.Statistics: Posted by Mash — Fri Oct 14, 2016 8:27 am
