Instead of vinegar or oil,I topped the jars with neutral at 45%. A few days ago I used garlic for cooking from one of the jars,and was left with clear liquid. Well I had to taste it. Hoo boy,not for the faint hearted! Some of the jars with more solid than liquid may require cutting with more neutral to be acceptable,but it makes one hell of a winter warmer. Which may be good as Scotland seems to be by-passing summer this year.
