I'm using the "best practice" method for my airstil ie a stripping run and then a spirits run.
All good so far but heres 2 questions:
1) I've already run 2 Spirit runs from this mash but this third one has a distinct sharp almond flavour when I test it with a pippette and water. Is this bad or something that will "air off". I had it the first time I tried the method a few months ago but havent picked it up since.
I took the 50ml foreshots off and just on 250ml heads but perhaps this time I needed to take a bit more heads off? Are they gonna be the hangover inducing bit?
I'm using the Vodka star yeast (previously it was the still smart)and still need to water this run down and filter it (the previous 2 have been done and are fine).
2) I've noticed that after taking the hearts, very often when I start keeping the tails in 100ml tasting batches, the first one after 500ml hearts +500ml tails (which by experience is what I automatically take off) is sharp to the taste buds and has lost the warm burn where as the next Tails, although having the slightly dry damp flavour (not too bad) is far more acceptable and warming. Has anyone else noticed this?
