UJSSM Fermentation Times?

I have wanted to try UJSSM for some time but I have been reluctant to start due to widely contradictory fermentation times quoted.

The original recipe is very basic

For a 5 gallon mash: (~19 liters)
5 gallons soft, filtered water.
7 lbs (3.2kg) cracked corn. 6-8 pieces/kernel is the proper crack. If using bird feed, make sure it is perishable, or in other words is free of preservatives.
7 lbs (3.2kg) of granulated sugar.
1 tbsp yeast (distillers yeast if available.)


This according to the recipe will "take 3 or 4 days for the ebullition to end."

However I see many people quoting a lot longer, including Aidanmac who stated in another thread

"My UJSSM was pitched on 22 Oct and it's still fermenting but quite slowly. Gravity is only down to 1.020 yesterday but the beer smells fantastic with that beautiful corn aroma. Can't wait, but I reckon it's going to be another 7-10 days before it finishes."

This will make it almost a month to do one generation and would tie up my brewing space for very little reward.

How long do your UJSSM fermentations take?

I've been dabbling with UJSSM this year. My first generation always finishes in about 4 days, with each subsequent generation taking longer and longer, even after adjusting the ph with calcium carbonate. I don't think I've ever run it past 10 generations.

Mine takes 7-10 days. Almost all of my ferments take that long to get to dry. Ebullition is the primary "boiling" fermentation. 3-4 days seems right for that. I think that would leave you running uncleared wash. Which is exactly what Ian Smiley calls for in his book on corn whiskey.
