Going to make some more Plymouth
(style) Gin tonight. Opened a new bag
of Juniper berries and they are a
lot dryer not as "oily", so am
going to add extra 3g see what
happens.

No on 1.5ltrs you might get 1100 and a bit.
It all depends on where you click off
don,t collect in fractions but you still
get a tail ?

I'm very unscientific, I stick my finger
under the flow and taste.
Last run I ended up with 750ml @72%
diluted to 45% =1200ml.
If I was greedy might have nicked another
200ml ? But whats it gona taste like
will it add to the flavour of what I have.
Last run tastes good, came off still
2 hours ago. Does Gin improve with age ???

I cut mine off when it gets down to a bit below 70. Below that I get tastes of violets and funk that I don't care for as much. I used to collect down to about 40 - 45 but like the crisper, more focused taste of an earlier cutoff. I am willing to accept the loss in product.

I am not sure if gin improves with age, but if you don't have something like Orris Root in it, the taste will quickly fade over a few weeks.

Hi Chill
After chucking 1st 10-15ml
starting A.B.V. is around 80%yeh!!
So whats your yeald at 70% on 1.5??
Only after Quality can aways do another
wash, thats the beauty of what we do.
If you love doing Airfix kits you
paint 'em glue'em etc then put 'em
on a shelf!!!
Don't know about you, but I love my
own gin& rum ;D ;D

The Plymouth (style)gin
is my stock fav. But the freshness or
ripeness of the junipers has a big effect
on the final flavour.
This unfortunately is down to your senses
to detect and adjust the amount you put in.
I have tried to sort this by ordering 1kg
at a time(serious about my gin)hoping to
adjust recipes to suit.
Are we therefore saying gin is all
about the freshness & quality of the
Juniper Berries you use ???

I don't discard anything at the start of the run. That is when the best citrus flavours come over. My gin does not often louche, but when I does... I don't care. ;D

I use 1.9L of neutral at 52-55% ABV. I collect about 900ml on average. I collect 700ml then start collecting in 100ml jars, about 80% full. By the time I get to the fourth or fifth jar, I can taste the part that I don't want. Jars before that go in with the 700ml yielding 900ml or a bit more. This gets watered down into 1500ml at about 50% ABV.

Being cheap, I keep the part that I don't use and keep running the still until it gets down to about 40%, when it starts to run out slowly. I collect this until I get 2L and then "strip" it to get a higher proof result. When I get enough of this, I will carbon filter it with the carbon just before I change to new carbon (e.g. mostly exhausted carbon). Then I make what I call "Nasty Gin" with that: some juniper, some coriander, some lemon peel, not much else. This is not sipping gin, but either gets used to clean the toilet :D or for G&T if good enough.

And yes, it is all about the quality of the ingredients!

Chuck

Bought mine from Love to Brew.
not to expensive, gives your gin
that "london" dry taste like"Gordons"
much sharper more umphhh than
fresh fruit Mash.
I like the taste and hot from the still
so to speak so does "Ferd the Fireman". ;D
