Got around 10 litres of this on a light oak from Jan 16. I'm a happy pirate. Many thanks for getting me there RJ. Any plans to head home for a visit ?

@ Mr Four Square. Thank you and your most welcome. No plans on getting down that way. Currently I am in the US. I am obliged to be here twice a year for about 5 weeks at a time, by request of the feds. Not what I want but dont have a choice. And that consumes my annual travel time and expenses.
On top of that, I was not satisfied with my water for 8 or 9 months and my stores are severely depleted. As all except the Apple Pie is aged, some 5 years, I need to do some serious production on my return.

There are a few of us on NZHD who have made a few batches of this and been very pleased with the result. We are working on a bottle swap so we can compare product which will be interesting. I've kept my oak pretty light and on 40% abv as per your recommendation. One of the other fellas is more of a rum man so I'm expecting he used darker oak. It'll be interesting to see what the taste difference is.

I've only used this recipe on a very very small scale, but it is both the simplest and best. Clean taste with no chemicals, added nutrients or filtering required.
(this is in an airstill. I imagine a little natural nutrient and a better still would be fantastic)

Just bought a load of Golden Syrup and 100 kg of brown sugar. 15% increase in price since my last purchase. That seems like a lot to me.

This is far and away my favourite home-made spirit for mixing, using whatever brand of lemonade and lime. Fine with cola too, but awesome as a fizzy caipirinha.

No UK retail price rises on sugar etc just yet. UK wholesale price did rise but has fallen back to summer levels http://uk.investing.com/commodities/london-sugar

I have been maintaining a stock of around 60Kg of sugar upwards,to act as a buffer to rising prices, it will help some, but the price rises will surely still hurt >:(
