Not so much a recipe more of a method, basically your regular 5kg 23ltr sugar wash tweeked.
Whatever amount of bananas available usually 2kg-5kg thinly sliced (half with skin still on)
cover with boiling water and add sugar then leave over night then top up with water/boiling water until correct temp for the yeast to be used then add yeast and nutrient if required.
After a couple of days strain the fruit out then allow fermentation to finish.
Basically it's like a lazy nana wine recipe, it will take forever to clear without finings but if you are not in a rush..

Stilling it would clear it pretty good, and if pot stilling for flavour may work well.
Maybe only for easily cleaned stills?
I have one of those.
Now looking out for cheap bananas.

Hi Robert,
Cheap bananas are quite easy to find as they spoil quickly, spotted/brown skinned ones are ideal for this. I've found them in supermarkets, markets and even petrol stations for next to nothing.

@ BH...ye the recipe is almost the same as my wine one...I was going to have a go yesterday..but it took so long to sort out the brew house...no time.
I agree, look out for the ripe bananas...a while back I went into a s-market and they had 3x4kg bags for just over a £....I took all 3.
We love our banana wine, here's hoping the wash turns out as nice..
