The lemon used was small and green and whole. And as you say ED it was reduced to something grey and unattractive in very short order.

I wasn't referring to flammability I was referring to leaching. If the alcohol can pull flavour and colour out of a suspended object it can surely do that to any material the vapour comes in contact with. Containers go without saying. Glass or stainless but what about lids? I do a lot of my experiments in Agee preserving jars ( metal with a small rubber seal) or in glass bottles (metal caps and a plastic seal) and a few Cookie Jars which have an aluminium ish looking lid.

I broached my macadamia confusion today and found it worked. Pretty subtle so cutting to 40%, maybe even lower, will be order of the day. Found the nuts had taken on the spirit flavour as well.
To that end, mandarins and oranges after suspended infusion, make very nice eating

I would nae gae putting rubber in there Mashy. Good idea using the handless sieve though . I'll be copying that !

Definitely want to avoid rubber and plastic in the jar. I use a large mason jar with a ptfe lid liner.

Yes Mash, I plan on using more botanicals than if there were in direct contact. I have not decided how much yet.

I have tried an apple at 45% to see if there is a difference.

I usually use about 50-55% for my vapour infusions so 45% should work too.

I just put on my gin trial: 800ml at 55%, 10g Juniper, 1.5g Coriander, bits of lavender, orris root, angelica, cardamon, black pepper, cubeb pepper, grains of paradise, a few pieces of lemon peel, and damn, I forgot the anise. All crushed and suspended in a piece of dampened cheese cloth in a mason jar, held on by the lid. Let the waiting begin.

Had a sip from the jar tonight (shhhh). It has been a week. The botanicals are noticeably more forward than the juniper though the taste over all is very subdued compared to what I usually make (which resembles Donald Trump in some ways). I put it back to sleep for a while more.
