Sounds like a plan chill. I am finding out that the only way to make gin using the t500 is to infuse the neutral using fresh herbs and a bit of cheesecloth or a hops bag. I wonder where I could find some instruction for that? Also I sampled some of my butterscotch schnapps that I made yesterday and it seems to be much better after chilling in the frig overnight. Taste like whiskey with a hell of a kick:-) and just a little sweet at the end. Overall I'm pretty happy with it.

I'm on my second strip for today. Another hour or so I should be done. Very happy with 93% and very little odor. Happy happy happy

When stripping I find it useful to have a glass of nude spirit from a previous spirit run to help pass the time and assess the stripped product

Beer fills me up too much these days. Spirits always seem to leave room for more. Though that does not always seem like a good thing the morning after.

Made my very first 50lt TPW yesterday.
I pitched it with a yeast starter I had made on Thursday evening and the wash took off almost straight away and bubbling nicely now in the hot box.
Before adding any lemon juice or citric acid I tested the pH and found it was at 5.4 so I left out the lemon which would only have lowered it even further.
My water is from a well and the natural pH is 7. I'm assuming the acidity of the tomato paste was sufficient to lower the pH without further assistance from me.
I'll be putting on a second TPW later today so that when I strip them I'll have enough low wines for a serious spirit run.

Bout time you ditched the turbos
lol. I did the Lennon, citric acid thing at first too, but found with time I didn't need it. The best ones I've done are kiss. It's really a fool prof recipe that turns out wonderful. Good luck mate.

ExPat BBQ today. Breaking out the Vodka that has been infused with a combination of "hot pot" chili. Better take along some cachaca also I suppose.
