Ok..I stand by my last post above..after reading numerous recipes, and watching youtube vids, it's all down to what taste you want to finish up with.
My first batch I used cloudy apple, brown sugar, and 3 very small cinnamon sticks. After making it up to around 18% (for my first try) we both tried it..
Second try I used clear apple, brown sugar, neutral, and only 2 small cinnamon sticks. With an hydro I adjusted the %
Both recipes came to the boil then down to a simmer for 30mins, what they'll turn out like after sitting about for a week or two who knows???
It seems to be, as can be expected..down to ones taste buds....so after my very small trial all I can suggest is, if you've never made apple pie shine..have a go and try it...
