Re: Quinces
All I can say for now is that from 5kgs of ripe quince scratted up there was barely enough juice to dampen the bucket. Like not even half a teaspoon. They are a seriously dry fruit. I have a car jack fruit press but I think it would be a waste of effort. Probably just let the yeastie boys do their thing and let the flavour come out in the wash. I'll tell you how much juice mine give up when they come out of the freezer.

Re: Quinces
Used 10 kgs of finely chopped quinces, 10 kgs of sugar and made up 50 liters total volume. SG around 1.075. A month on EC1118. The barrel sits on a heatpad and is wrapped in a sleeping bag. I've got an FG of 0.98. Looking nice and clear.

Way to go, eh?
Interested in your end result; could renew my interest in my tree, most of my fruit other half snags for paste. :-)

Their like rocking horse crap to find these days....old fruit that's gone out of fashion. The better half did have a couple of lbs given to her last year...which got made into jam.
I tried to be normal once, worst two minutes of my life.

That's what I thought but when I went to the market there were several vendors with them. I waited a few weeks till their stock started to get a little spotty and made an offer. Picked up 20 kg for a song. Same thing happened with getting plums. I tried to find people with trees but in the end picked up a big box of soft fruit for a few dollars.

Re: Quinces
Happy to report that the Eau de vie de cong (quince) is in the jar and tasting great.
I did a strip run on 50 liters of dry wash. That gave me 10 liters at 45% ABV. Diluted that back to 30% (15 liters in the pot)and ran it nice and slow.
The hearts smell and taste just great !
A winner. And finished up just as this years crop is getting ready.

Re: Quinces
Just finished my last drop of vintage #1 Quince last weekend. Today out of the blue I got given 20 kgs of the big beautiful yellow bastards. Furry and fragrant
Woo hoo out with long knives and off we go again. Seriously , if you can find a few kgs of these give them a go.

Re: Quinces
I am planning to give some a go this year.
I was going to freeze/press them to get the juice out - and then top up with a little cheap cane sugar.
Most of the plum family our hard work to make into a poor wine - however, a quince/plum mash - happy days.

I'd have thought freeze then thaw might get more juice,
That's the the way that I treat my sloes, and that works for me.
But macerating,so I may be a slow trick behind on this thread.
How the system has allowed my post to come up as one of P's beats the bejesus out of me,and it is too late to care.

Re: Quinces
Phantom Bob I chipped them up and froze them and it made no difference to the juice take. They just don't have that much to give.
Macerating works well for all sorts of fruit ( Cherries ! ) if I have some quinces and neutral next year I'll give it a go.
This recipe worked well for me last year Mashy. I'm very happy with my results and looking forward to this years double the fruit batch. It's still merrily bubbling away in the garage...

Re: Quinces
Thanks for reminding me of the site glitch!
Yes,quinces can be as dry as old leather, the taste is worth pursuing though.
Do I have any more advice?
Sorry,no.

Re: Quinces
It prompts me to try and remember to see if I might be able to find some though. Then either as a mead, or just freeze, crush and soak/steep in spirit.......
I'll have to wait and see.......

Re: Quinces
That 20 kg of quinces is still fermenting away nice and steady six weeks later. Far out ! It hasn't formed a cap, just the chipped fruit floating on the surface of the wash. Might do a SG test to see how far it's moved. Or I might just leave well enough alone and wait for the airlock to go quiet. "Take time it will" to quote Yoda. Or was it Aidenmac? I get the two confused sometimes.
