MY SECOND AIRSTILL GIN.

Having based my first Gin roughly on the details given in the “Boodles Gin” thread, I made some changes this time.

I had started out with 4 x 23 litres of Kale Wash, each strip and spirit run.

I use a copper mesh basket to hold botanicals.

Still charge was 2 litres of 40% neutral + 1 litre water.

Botanicals:

1. 12 g Juniper Berries (Grind)
2. 6 g Coriander Seeds “
3. .50 g Ground Cassia Bark
4. 1g Caraway Seeds
5. 1g Dried Sage
6. 1g Dried Rosemary
7. .25g Ground Nutmeg
8. 1g Angelica Root “
9. .25g Oris Root
10. 4 g Dried Kaffir Lime Leaves
11. 3g Dried Bitter Orange “

To weight these accurately I bought a pocket size set of digital scales on Amazon for about £6.50, free postage. They arrived in two days. They can weight to hundredths of a gram.

I ran until I had a parrot reading of 55%abv, collected and diluted to 40% abv.

I accumulated 15 x 75cl bottles of extremely acceptable Gin with which I am delighted.

I think that any changes in future runs might involve a slight reduction in Caraway Seeds and a slight increase in Dried Bitter Orange.

Yeah. The bitter orange thing is good. I fannied about with fresh lemon and tangerine skin for ages.. Not a patch on bitter orange. 8)

From previous comments Mash, your tastes here parallel my own, I do like the bite of citrus in the Gin.

However, as sweet and sour are basic taste elements, I am also pondering whether to add a little dried liquorice root as well.
