Damson 2015

Well it's now all bottled - 21 of them to be precise. Given it was all fermented together and then split into demijohns for settling, there's quite a range of results, but all is well. The gallon that went through the AirStill is also rather nice. Be interesting to see how the half-bottle I fortified with 40% neutral turns out ;)

We popped the cork out of a bottle of last year's carrot this evening - that's turned out pretty well too!

The yeast gods have smiled on us.
My reds this year are stunning...very pleased indeed.

Particularly as it has been a complex process.
