Re: Cachaca - cane spirit
@ Gaza: I use bakers yeast for everything. Relatively cheap and always fresh.
Dead yeast makes a good form of nutrition for yeast. I am sure raisins would work fine but have not tried them.
I use 24 cans of L&T GS per 90L. That might be a fraction light, but I buy 10 doz at a time to make up 5 x90L ferm tanks. Just works out as a convenient number with none left over. That gives me right around 100L of finished product.

But they have to be different drinks.
Having made it, to his recipe, I can only say it is good.
I guess the jury are out ?
Robert.
There might be a slight taste issue but the first thing the yeast does in the slightly acidic cane juice environment is to invert the sugar with enzymes, and golden syrup is inverted anyway. You end up in the same place, sugar wise.
Yeast inverts it then ferments it. Lyle invert it as part of the method to extract the sugar from the cane, and we give that to the yeast instead.

It does have a 'life' but I think this is more in terms of "once opened, use within xxxx"

Re: Cachaca - cane spirit
Finally ran my panela wash. My wife loves cachaca and said that she prefers ours. I will chaulk it up as a win. Thanks for the guidance.
