Alcotec 48hr yeast

Hi,
My local brew shop only sells this yeast so gave it a go.
Used 8kg of suger as directed on packet and a sachet of liquid carbon in the wash.
After about 5 days the fermintation was complete. Left it a couple more tho.
Added the clearing sachets. We noticed that the wash would not clear completely. Im sure before it was as clear as water. This was slightly cloudy. Even after a few days it was not perfectly clear.
We ran this through the still.
This batch has a almost nutty flavour compared to the still sprits yeast.
Has any else come across this. Im making a filter and will be using activated carbon granuals to try to remove this.
Any advice would be good.

I haven\'t actually used the 48 hr yeast, but if there is residual flavour, then its in the wash in the first place. So while its been concentrated by the distillation, some of it will have been removed as well. Hence I\'d water it down to 40% and re-distil it carefully, as you\'d be able to take the hearts and then water it back down to 40 % and then filter it with carbon......

If i put 4ltrs of 40% in the still, how much do i take of that roughly.

Hi Robbie, welcome.
If you start with 4 Litres you will get between 700 mLs and 1 Litre depending on when you stop it. The strength will depend on the original strength of the wash -- with Alcotec 48 you should be able to get 60% at 700 mLs, slightly less with 1 Litre.
With 4 Ltrs of 40% wash I would guess you get about 70% ABV.
Not wishing to criticize too much (this is a real friendly site) but you will find all your questions answered about fermentation and distilling with an air still, if you look under;

Well when I get it from the still, the first distillation is usually about 60% ABV, watered down to 40% and then re-distilled, I then take 800 mls, which is usually between 80 and 85% ABV (more often than not, 85%). So I take about 800 mls or until it drops to 80%, that\'ll be what\'s watered down for drinking, but I then leave the still running and take it right down to 10%. The lower % ABV stuff is returned into the next batch of wash for re-distillation.
You\'ve gone to the trouble of fermenting it, so why waste it eh!

Hi Phantom,
Bit puzzled, you say you get 85% from a 40% wash at second distilling?
I often get 85% from a 60% wash but never from 40%.
