Spiced Rum.

Postby Icefever » Fri May 27, 2016 8:21 am

I stripped a GS/kale wash before we came away for this weekend...so that we would have a bottle.
The last 3 strip runs have been single pot runs..I want the flavour to come through...and it's a very nice white rum. ;D

I save about a liter from the sweet spot, and use this for playing with the oak dominos that I ordered from SD. After a glass or two the other night, Mrs Ice asked about what goes into spiced rum.

I have a rough idea...and after some surfing found this...

Spices Rum Ingredients

1 Liter of rum distillate (fresh rum)
1 vanilla bean, split lengthwise
1 cinnamon stick, chopped
5 whole allspice berries
5 whole black peppercorns
1/2 star anise (licorice taste)
1/8 tsp grated nutmeg
3 2-inch pieces ginger
2 3-inch strips orange zest

Instructions

Mix your favourite spiced rum ingredients as suggested above with 1 Liter of light rum/rum distillate in a glass carboy or wooden barrel.
Age at least 5-15 days depending on desired taste and strength.

Strange as it maybe...about an hour ago I ordered some vanilla pods...Here

Come on ICE work this one out. I have been trying to achieve something like Kracken (Which is luuuuurrvvely)

I did loads of research and then came up with Buccaneer Bob's recipe and my mind imploded with opportunities.

Consider the gauntlet thrown down :)

I am trying to tweak this to get to kraken, which definitely has chocolate notes a tiny bit like Tia Maria.

I Have a new flannel that I used just for this purpose. Wet it with alcohol or water whichever.
Laye in the Funnel and filter through it.

A brand-new flannel wants awash first to get rid of the fluffy bits. But after that I find a filter very quickly and very cleanly. Empty / wring out, jobs done. Wash ready the next time.

:o I tend to avoid fabric softener :o

Was in the laundry trade and actually ran
a commercial laundry for nine years.
A did you know ?
Did you know that fabric softener is water
proffer, thats why towels dry you quicker
and easier without proffer (softener). ;)

Oh dear cant tell my "o" from my "f" :)
On a happy note, read somewhere about molasses
being added to rum.
If you were to add.
How?
How much?
Would you need to filter?
Would the rum end up cloudy?
I say this cause I tried to add honey to JD
neuk,it was cloudy but after a month it blended.
It was still cloudy but angels on the tongue!!

Yup I have done that with honey. It does settle out.

Molasses is similar. So is Brown sugar.
Coffer filter gets some of the particulate.
I add at 1tsp per litre and taste. Less sweet than honey.
