I think you really have to add your flavours
after stillin' just like adding oak for flavour.

There are reasons that traditions are traditions.
It is sometimes called experience.

As kinda mentioned, I think the best, most natural flavours are created pre-distill and added back in post distill. I certainly cheat with essences etc, just as I cheat with dried spices in cooking, but that says all we need to know about my sense of taste and smell.
I mentioned adding dunder (rum), backset (whiskey) but couldn't and can't think of the right term for brandy. I still (pun intended) think I'm right.

I too cheat where I can.
Where I have discovered that I can't, then I go the long way around.
I think the base premise for this thread was that someone, somewhere, claimed to have made Peach Brandy from a can of peaches.
Bolleaux, as the French may say.
