Mail Order Essences
Sorry, I should really point out - the chips I am using are ONLY the chips which have been made from chopping up old whiskey and wine barrels, my theory being that it's sort of the same as putting the spirit INTO the barrel but in reverse! You can buy Jack Daniels ones and various ones from wineyards - for those who don't know, JD and other bourbon makers are forbidden by law from using the same barrel twice, so they have to get rid of them somehow. Many go to Scotch distilleries for making Whiskey (and they also use secondhand sherry barrels too) but JD seem to sell a lot of BBQ chips too - wasteful, but their loss is my gain! The other ones I have are Steven Raichlen wine chips ( http://www.amazon.com/Steven-Raichlen-B ... B000ENYX9W ) which give a fruity flavour which I think would be good with a brandy or something like that.
