I have a litre of much the same as your recipe Alan it will be 4 months soaking come xmas am going to bottle it then also got 2ltrs of morrello cherry, what i have done with this is to put a kilo of cherries in and let them soak for a month then seive them out and put another kilo of cherries in repeated this 3 times, the cherries that have been removed make an superb dessert with some ice cream :)

If I could track down the damsons, I\'d give it a go as well.
Though it occurred to me that the method is very similar to sloe gin, except all the sloe gin recipes I found just said that the fruit needed to be pricked, or it can be frozen as that has the same effect.
So I did just that i.e. froze the fruit.
It\'d certainly save on the hassle of de-stoning the fruit....

My fruit was all frozen a good place to buy frozen fruit is farm shops/garden centres, you will find some have freezers selling it loose, there are several near me in the south east.
