A search through my recipe files revealed an attempt to use Demerara that was basically unremarkable in producing a relatively neutral wash. I had expected a rum type spirit but just got neutral. Sorry I've nothing helpful to offer but your post looked lonely so I decided to chip in.

Still in its bags at the moment, not had chance to do anything with it, maybe at the weekend I'll have time to get a wash on.

It's got some vitamin c and some sort of flour in it to make it fast acting apparently.

Smells like malty beer kit as it ferments, unexpected but very pleasant.

Hi Anavrin,
i have done a few of these and i just do the 6kg brown sugar and 21 ltr of water, i use wine yeast and nutrients (which i still have left over from wine making), and if you have it i also put i spoon of molasses per kg to add a bit more flavour. i got some from amazon, without molasses it still makes a nice wash.
My favourite is to go even darker with the dark muscavado, its more expensive up to £15 a wash, but its even tastier. I also do the same recipe as above and it is really nice through pot still twice.

Hi JD
Let's hope it turn out as good as yours sounds.
I almost forgot about this wash, been busy in the home with the new arrival, I was thinking of making another couple of these washes to run them through the big still, but I've now decided to run the wash through the airstill a couple of times following Aidan's guide to see how it turns out, might even age the result on a bit of French oak if it's carried some nice flavor through :-)

Do you take neutral cuts for this or do you allow a touch of heads or tails in for more flavours to mature with the oak?

I allow a bit of heads and tails as i like the flavour and i am also not very experienced in doing the cuts. I think you should do it to a taste you like. i do cut it, but prob not as much as you might! :-)

To start with i use 1 tsp of oak per ltr. Then see how that taste, for me this is the good. I have very fine french oak shavings, if yours are the same you may want to use a bag as they can float around if disturbed. You need to keep it settled somewhere when you want it and siphon off or filter it when you want it which for me is often :-)
Congrats on your new arrival, hope you will be celebrating with some good rum...
