Not as well as planned.
I started a fresh demijohn for each 25L fermentor, made a sugar wash to SG 1.050, got them going and added some stopped wine, after a couple of days doubled it and again once more so now have half full demijohns, you can hear them fizzing quite well but they dont bubble much at all, very slow.
I guess I will add more stopped wine in the morning and after a day or so add back to the fermenters and see what happens.
I was expecting a lively start to the proceedings but hey ho.
It would be a real shame to mess up 75L of gen 5 UJSSM.

It's bang on. A gentle "getting on with it" is to be expected. This is not a first thrash like a new fermentation.
If you are concerned.. Add back a bit less. It didn't have to be ½

Some success, one of the 3 UJSM managed to ferment out but 2 have sadly failed, the cornflake whiskey has also finished and is resting on wood for crimbo, the rum went down the sink as it had done sod all.
The 2 failed UJSM are now all I have left to fix, they have cleared and I have racked them, they sit at 1.035 with a PH of 6.5, is it worth getting a restart yeast or should I try the starter trick again? I wonder if the problem was in the grain bed and now we are back to liquid only there may be a chance of success?
Pretty chuffed with the fermenting cupboard and the inkbird, well worth the effort and small cost.

Where they fermented on the grain? Did if float up to the surface?

No worries ED I guess it's a good thing if your brews never stick, you must be doing something right or you are just a jammy bugger
Yes Mash fermented on the grain and some was floating but mostly sunk, gen 1 through 4 went swimmingly it was just gen 5 and a heatwave that has scuppered the brew, I think something funky has happened in the grain/yeast bed with the extra heat that stopped the restart, now it's clear and just liquid fingers crossed we are good to go again, I will report back in a few days with findings.
