Following VT's advice I've been out in the workshop this morning and tinned the inside of the elbow, it now fits tight enough not to leak.
I drilled the plastic out to 10mm.

Then offered up the mod and away we go...

Then by standing the pot on top of the microwave, that gave me the room to put my sample jar in the bowl and let it fill. That way I could keep an eye on the %.
It's a little "Heath Robinson" but hell was fun.

Cheers VT...It just came to me to collect like that so that I could keep my eye on it. I emptied the test jar when it got full (it did fill & flow over a couple of times). I remembered I read on here that the parrot needs to be only a fraction larger than the hydro so that the change in the % coming off registers quicker.

The last bit to the end was at 30% then it went through 20% down to around 17% in the matter in minutes. I'm chuffed with how it's going, I'm reading & learning loads.
