Still output
People talk about lowering the output there still is working at, I understand that the slower it comes out the better it is and better cuts you can do but am I being stupid thinking these people have some sort of adapter the plug into to control and that there not controlling it from there airstill ?

yes, with a potstill or airstill you control the power put into the liquid.
Slower doesn't always mean better - if you run a pot still too slowly I find the spirit can taste hot.

Ok how ? As there are no dials etc on it, or even a power on/off just plug in and go.

You need to make/buy an external controller, plug the still in the controller and the controller into the wall.
