Depends on the quality of the brass - best to stick with SS or copper.

Yes they are sexy. You'll maybe purchase one and after a few months you'll wish you had spent the cash on something bigger. I think that is the case with this hobby. you get hooked on it and that's my two pence worth.

I know what you mean from beer brewing, people start on 5 gallon buying all the equipment then get the brewing bug and wanting to go bigger once they taste the results.
I went from 5 to 10 to 15 gallon batches where I'm now happy at 15

It will be considered by many now to be not the done thing,but I use a couple,where there seems no alternative.
Other people do too,because they like the contrast in colour,- check out some of Myles builds,but he may treat the brass,I forget.
The small amount of lead in brass,and the even smaller amount on the surface (by ratio) is not something that I lose sleep over.
I once lived in a house where we eventually ripped out metres of lead pipe from the mains water supply,it's too late for me!

My thinking regarding brass is just for a couple of points where I'd like to disassemble for storing away and easy cleaning?
Would probably have 2 at the most, one connection to the pot and one before the condenser.

I wouldn't worry to much about a couple of brass connectors chances are they might be passed as safe for using with potable water anyway .

And that is what I do too,and I don't worry about it.
I think that you have to make an informed choice,and live with it.
