Now a curry flavoured spirit has an appeal to me,and I suspect to others here,so if you manage one,please share.
Equally,please post your Damson recipe on the recipe slot,that is a slow moving board,and new addition's are always welcome.
Plus I live in the cooler North and have Damsons to pick next week,and need them to earn their place.

I have come to look at it as just another method of cooking. Except I fall over if I consume too much of it.

Robert, my freezer is full of Damsons, Elderberries and Grapes - lots of potential schnapps.

I have done a lot of fruit experiments (read some things turned out less than enjoyable to drink). There are three basic approaches: ferment on the fruit and distill, macerate the fruit in neutral and drink, macerate the fruit in neutral and re-distill. Different fruits produce better results with different methods. Apricots and plums take well to fermenting on the fruit and distilling (preferably on the fruit and pits). Cherries and peaches do better with a maceration and re-distill. Tropical fruits seem to be better (more pronounced taste) with a maceration and then filter and drink. Dried fruits work well that way too. As does ground coffee and cocoa nibs (separately or together). My Italian neighbour makes wine every year and I get the pomace to make grappa. It turned out very bland this year. But I macerated some very fragrant grapes that grow in my yard with some high proof grappa. Blended back with the rest, the result is astoundingly good! If you like cooking and drinking, you are going to LOVE this hobby!

I'm trying to build a stock of Spirits to experiment with (slowly... given it's an Air Still). I think I'd have to be really creative with my Air Still to achieve anything half way close to your results!! If I can make some enjoyable drinks to share with family and friends I'll be happy
