I am a novice distiller from the Wet Coast of Canada. Starting off with an air still for now. I've done one run of wine that had been stored in dubious conditions. The results were... educational. I tried to split up the run and now have my first inkling as to what foreshots, heads, hearts, and tails are like. Far to go and much to learn, but smelling and tasting really brought a lot of read information to life. I ended up with a fairly drinkable bottle of 40%.
I do want to thank Jimmy for hosting this, everyone (well, mostly it seems now) for behaving is such a mature manner for the Internet, and AidenMac, Mozr (and a few others whom I forget now) for such useful and informative posts. I have thoroughly enjoyed the last couple of weeks of reading and learning. You are a great group of people!
