Banana wine.

Found time today to make the first of this years wine...Banana..with enough nana's left over to make another gallon tomorrow.

I do believe from the location of the post that Ice is simply making banana wine.
To drink as wine.

Your best bet is to slice some bananas and macerate them with neutral.
I did this before Xmas,and it was coming along nicely,tested occasionally!
I made the stupid mistake of not using an air tight container,on a sunny window cill.
It was only when I realised that the volume had dropped significantly that I could see that the alcohol had vanished,and while it tasted banana-ery,it was not the drink envisaged!
Banana water,I might file a patent.

Banana wash has been tried before. Just don't. The result is, uh, not good. I've done the maceration that Robert describes before and it is excellent. Use very ripe bananas and maybe a few walnuts for liquid Banana Bread.

Yup...banana wine..we were lucky last Friday at the market we got 4 x 3kg bags of ripe ones for £1.40. This is the cheapest way of doing this wine.

It looks disgusting when you pour it into the DJ....but trust me it clears well to a golden colour, and the taste is out of this world, we treat it like a dessert wine.

This time I did an hydro test on just the steeped banana before adding the sugar it came out at 1.026 @ 52c which give me a SG of 1.036...it was just curiosity at how much natural sugar was in the must.
I then added 1 lb of sugar which finished at 1.071...it's been sat over night in the kitchen and I'm thinking that I may add a little more just level it out at 1.090....before I add the yeast and other bits.

@Icefever. Are you interested in sharing your banana recipe and and any other relevant info? It would be appreciated. I am still in the states, but banana wine is on my list pending my return home.

Im interested in the recipe too, I have a banana wine recipe in a book somewhere, it'd be interesting to see how similar or not it is.

It's on a page with a WOW type wine.....and a rhubarb recipe....don't forget it won't taste anything like it should for the first 6 months.

We tried a bottle at 3 months and it was not good...left it another 3 months, not so bad after all.

Left it for another 3, making 9 months in all and smegging hell, it was so intense with flavour....finished up like a banana liqueur.

We're buying some banana's this weekend just to have another bash....hope you make it and enjoy... ;)
