I set up a mates T500 today but had loads of trouble getting the water temp to stabilise.we ran a temp water supply with a garden hose to is shed could this be the problem as there seemed to be a lot of air bubbles in the outlet water

Alan the T500 is a design that is susceptible to fluctuations in coolant pressure or flow rate. This is NOT a criticism, just something you need to work around. Either fit a pressure reducer or even better IMO fit a header tank in the coolant supply.

If you work with pumped recirculating water this is even better as you can configure it to be quite stable, and can reduce the sensitivity by using pre-warmed coolant.

Use the product condenser output to fill the header tank and use that warmed water to feed your reflux condenser.
