Crayfish

Hi All
I was reading in another post as to how good Makers wife was at catching crayfish and it got me wondering. I go crayfishing over here in oz every summer and was wondering if we are talking about the same thing?

This is what I catch over here and call a crayfish. This one was around the 2.5kg mark, how does it compare to what others call crayfish? How do people like to eat them, I like mine without any dressing or sauces.

Our waters are infested with American Signal Crayfish, they grow to about 15 cm and it takes a good few to make a meal.

Pyro is bang on the money here. The native species here have been decimated by our American friend. You can trap them here under (free) license from the Environment Agency but all native species MUST be returned back to the water.

I keep a trap in the van and as long as you have permission from the waters owner and tag from the EA you can bag yourself a load in a couple of hours. Put em in a bucket of salt water for an hour to leech the $hit out of them then cook em up. Luvvly :)

Ok good old google, I have worked out that your crayfish is very close to what we call a yabbie that lives in fresh water. The pic of what we call a crayfish is a southern rock lobster and lives in salt water. Both are great to eat.
