Gin Again!
This makes a refreshing gin, that folks are telling me is my best yet. I really enjoy this drink.
Into the boiler goes 4.6L of Neutral @ 63% ABV (A demijohn full), and 6.2L of water to bring the ABV down to about 27%. This is a vapour infused recipe, so the botanicals are coarsely ground and placed in the vapour path.
24g Juniper
10g Coriander Seed
1.2g Orris Root
2x Green Cardamom Pods
1.3g Bog Myrtle
1.1g Meadow Sweet
2g Dried Bitter Orange Peel
1.2g Angelica Root
0.7g Liquorice Root
5x Cubeb Peppercorns
0.1g Grains Of Paradise
I remove the first portion of about 40ml slowly at about 700w, then gradually increase to around 1000-1100w and run it straight into a Demi. I then switch to jars when the AVB drops to about 40% this last portion can we quite floral, and had a strong cardamom aroma, I normally blend some of this in to the final product, normally about 50% of what I collect down to 30-25%.
I then cut to 46% with fresh water. It takes about a week to 10 days for the flavour to set, it can seem quite nondescript and lacking in flavour straight off the still, but magically develops over the first few days.
