This is what I do Phantom, changed from those previously posted, seems OK to me and mine.
My modded Apple pie recipe.
Mainly 'cos I don't see the point in making alcohol and then boiling it off!
Take some premium apple juice, I use Lidl brand cloudy, not from concentrate, put it in a pan with a good amount of cinnamon stick and bring to the boil,then simmer until reduced to almost half.
Filter through coffee filter, or if being cheap, like me, kitchen roll, into a DJ containing around 45g sugar/litre.Maybe adjust this amount to taste.
Swirl around to dissolve sugar.
Add equal volume of 45% best neutral.
Set aside for awhile.
There will still be sediment.
TRY to syphon off without disturbing it.
Good luck with that part.
At this point,you may decide to add a clove or even a cardamom to the next one, be cautious.

I took shit on one of the wine forums a few years back for using a clean, freshly laundered then soaked in sulphite, commercial type tea towel to strain out the grated ginger from a batch of ginger wine.
I don't GaF, it worked, well........
And thanks to Robert for posting the recipe/method.
When I can get the AJ, I'll give it a go........

Today, or yesterday as it now is, I Smart-Stilled 4 litres of OEG, took a little more than suggested and will test on the morrow,
Lovely Juniper aromas filling my domicile.
There have to be worse days than this.

Think I may be able to see now why some people spend so much time with their still....
Seriously nice Robert. Seriously nice.
Aimed it at having for Xmas with family, plus have some for daughter and her hubby next Feb when they lob from the UK. Going to be a struggle...
Be a good one too in front of the fire in Winter.

Certainly, in my part of the world, it seems to be a drink suited to the winter months.
It would be interesting to try it in yours, in a warmer November than I am used to!

Well,I have to say, that after marinating for longer than usual, and collecting just a little more, the result was just too strong tasting! (I have never understood the "age for 5 weeks in a demi-john" part of this recipe, to me it doesn't change after a couple of days.)
All is not bad however, as mixing with equal quantities of 45% neutral has produced a decent gin.
Woe is me! Twice the expected volume!
It's a dirty job, but someone's got to drink it...

I agree, the aging seems excessive. Two to three days seems enough. I really like the taste of the tangerine peel. Not for every bottle, but it is a nice change.

I used Lemon peel for this one , to ring the changes.
What is nice is that gentle tweaks to the recipe produce subtly different results.

Me too. Never seen anything beneficial...indeed if you don't put grains of paradise in there is a good chance of favors fading.
