This is not an advert for http://www.smokyjos.co.uk/ but the pages are full of great pictures and helpfull stuff, I went to Cumbria on a course there a few years back and it was a great tasty day out. My smoker is an old aluminium square thing with a lid, it came out of a school skip many years back. My favourite is cold smoked duck... lovely warm in a salad...

It is indeed galvanised,I decided that Zinc with a MP of 400°C + was a safer bet than an unknown paint.

I took time this morning to re-read this thread....ED started it in Jan 15 and it ran until Oct 15...it turned out to be a very interesting thread...hence the bump

I was just wondering what you guys have been up to since then???.

One of my crimbo prezzies was a smokegun...Here not got around to having a go yet...but we bought 8 fillets of sea bass t'other day, so I'm thinking today would be a good day to try a couple??.
I tried to be normal once, worst two minutes of my life.

It's great if you want to smoke an item "on the spot" so to say. It saves time having to stoke the big un....and wood chips.. ;D

Bumping this again, as I decided to load the cold smoker this coming weekend while the temps are still low.
Today, Robert went to the store, and he bought a whole Salmon, a large rainbow trout and a kilo of Cheddar cheese. These, (EX) the cheese will be cured and then all smoked and eaten without cooking.
He also bought a chicken and a fillet of pork, these will be cold smoked and then cooked.
He is thinking that if there are any spaces left in the smoker, then a dozen hard boiled Duck eggs might find themselves in there too.
Nearly forgot the half dozen Garlic bulbs that will be in there.

It's a dirty job, but someone's got to do it. :)

The eggs are GOOD, the cheese is scrummy, Roasted the chicken tonight - it's gone! The pork fillet is in the freezer awaiting a BBQ, the Trout I decided to hot smoke and ate, also very good.
The Salmon,... abbreviations like OMG don't normally appear on this forum....
I usually have a bias to Beech sawdust, this was Oak, superb.
Most is now in the freezer.
I will have some to be sampled August 19th, if I can resist it!

Another bump.
Today Robert went to the store, and Rainbow Trout were £4 a kilo, so he bought some, they are now curing and will be in the cold smoker tomorrow, along with a big chunk of mature cheddar and a few or a lot of hard boiled duck eggs.

I will eat smaller portions.

Hot smoked a side of salmon recently.
Prepared in 2 parts seasalt one part
soft brown sugar. Wow smoked on oak.
Rather have a full bottle in front of me
than a full frontal lobotomy

Our Goosies went in the freezer when fowl containment hit.
We were bored with them anyway.
The Ducks and clucks have surprised with their seeming contentment at being confined, and continue to lay well.
I am curious to learn of the "free range" status of British flocks, as my understanding of the latest extension to the confinement rules means that the term "Free Range" has now been legally removed from the whole of the UK, due to the length of confinement?

Have not tasted the smoked eggs yet, but the trout is pretty good. :)
