There's nothing to stop you building a cooling system....my only question is why???

Do you have a need to cool the boiler down fast???

my water inlet is very unstable and 4 hours of constantly adjusting the valve is a pain.

My answer to an my unstable water supply was to feed the mains into a small central heating tank of about 20 litres via a side entry fill valve, and gravity feed that to the T500.
I later went on to using a pressure reducing valve from Screwfix.

Your water supply sounds as dodgy as mine.
I don't run a T500, but air cooling is still working for me.
