How's this for easy?
I put 2 tins of peaches minus juice, 8oz Sugar and 1 litre of neutral spirit in a kilner jar. Shook it daily for 2 weeks, filter through a coffee filter and voila peach schnapps.

Bottle in the freezer, very nice even if I do say so myself.
Oh and 'er indoors is making boozy peach jam with the used peaches :-)

I have some in a dark cupboard....(still unopened).... a bottle full of bluberries which are now green and have turned the spirit red....

Plus i have a litre jar one full of strawberries..... the spirit strips the colour and flavour right out of the fruit......... as you said you filter with coffee filter papers, then eat the fruit,,, thats if you like white strawberries, and green blueberries, i give mine a good time to infuse though

A word of advice from me though is be careful with cinamon sticks as i contaminated a bottle, i looked on its progress and there was fur on the stick....... down the sink that went........

Google infusing vodka.....

I've done all sorts too over this year, rhubarb, strawberries, raspberries, lemmon, and blackberries. This was how I convinced 'er indoors that the easystill was a sound investment, I get my booze and she gets her vodka to make christmas presents. I usually give the fruit at least 3 months but the recipe for this one said 2 weeks was ok as it was tinned peaches. I have to say it is more than delicious.

Alan - I can't remember if I asked you this before - is that the Vodka Star yeast, and is it any good? I heard it was very pure but wondered if it was just hype?
