Obviously not, this guy can do in 24 Hours what we take months trying to do. We must be doing something wrong!

My immediate reaction was that it might release to much tannin. I'm going to try the method when I make a new batch of grain spirit which should be in January - subject to whether! Yeh! I said whether...as in whether I feel like it or not

I'm assuming my family and friends will deplete my stock over the coming months and if so I will probably do a grain series in the new year. I'll let you know how the Oak cutting experiment goes

I read the link in the OP with great interest.
One of my middle names is sceptic.
I shall endeavour to follow this,and see if they really have found a holier grail than good old new fashioned nuking,as a short-cut to good old fashioned aging.
The funding process being followed raised questions in my mind.

I have been relying on end grain in the ageing of my rums for years. I age in 50L stainless steel milk cans and use toasted oak. With maximum end grain exposure I can achieve in 6 weeks what would take 9 months in a cask - which is side grain exposure.

24 hours gives me a noticeable change in color and taste, but 6 weeks is even better. A year is even better than that.

These have been around for a while, looks like they work on the same principles.

@YHB: Those spirals are great. Work perfectly.

Aren't they a bit pricey compared to buying your own American White Oak then seasoning it for 24 months .........cutting it to the sizes and shapes required....... then toasting it.....

OK they're not bad value if you can get them on this side of the pond
