Just wondered if anyone has run ujsm with their air/smartstill?
Wondering how much flavour will be left after double distilling?
Trying to get an idea as to weather I should just stick to sugar washes and jd chips

The Airstill is a basic potstill and, as such, should retain flavours after the second generation wash using approx 20-25% sour mash, but remember, the resulting Whisky will still require Oaking on, or in, toasted and charred American White Oak ;)

What would the first gen taste like?
I understand it wouldn't be a sour mash but just wondered if anyone had tried it

First gen is a bit non-descript. Flavour doesn't really come through until third gen in my opinion ;)

AM is right. The real flavor doesn't come through until about the 3rd generation. The first generation provides a lovely corn smell but you will have to keep going to get the best ujssm that the recipe has to offer. I pretty much run ujssm and sweet feed exclusively on my airstill. I have had no complaints so far...just lots of requests. Definitely age it on charred oak and let time work its magic. Good luck.
