Depends on whether I am trying to build up a stock or just maintain supply. Average now is 1 or 2 a week (23L). I can have 250L fermenting at once. ;D I have had close to that recently with the fall season of grappa, apple brandy, plum brandy, vodka for macerations and rum for re-supply.

I generally keep just one 50lt on the go during the summer (if you can call it that ::) ) but now that we're heading into the darker months with very little that can be done outdoors I'll be running two 50lt washes at a time but these can take up to 14 days to finish, then with clearing and stripping you're talking another week then spirit runs.

All-in-all I'd say, if I were to put on two 50lt washes today they would be fermented, cleared, stripped, distilled and bottled in 30 days. I'm not trying to run a super efficient production schedule and others may do things quicker but I enjoy the way I do things.

I stagger my production so that I've always got something in the works.

Normally at least one, though at the moment, I don't have any, as I have a stock of about 14 or 15 litres of 94% spirit waiting to be let down and re-distilled.

This'd be mainly because for the last month or so, I've had other home brews going on in my fermenters. Most of them have been free'd up so I can get another batch on the go.....
